Sesame Ginger Salmon Burgers

These deliver a taste of Asia without the soy. Easy for a quick weeknight meal.

2 14.75-oz cans canned Salmon, bones and skin removed
1/4 cup flax meal
2 TBS chicken broth
1 TBS sesame oil
1-inch chunk fresh ginger, grated
3 scallions, chopped
1 Tbs sesame seeds, toasted
salt and pepper to taste

1. Remove any bones and skin from canned salmon and place in a large bowl.

2. Combine chicken broth and flax meal. Add sesame oil. Add ginger.

3. Add flax mix, scallions, sesame seeds and salt and pepper to salmon, kneading with hands for a minute or two. Form 4 patties.

4. Sauté in a lightly greased frying pan for 10 minutes, flipping halfway through, until lightly browned on  both sides.
