This is a flavorful accompaniment to roasted pork or chicken. It would also make a nice addition to a salad or wrap sandwich (Lately I’ve been obsessed with Trader Joe’s Brown Rice Tortillas for making wraps).
Ingredients
3 Tbs olive oil
2 onions, sliced in thin rounds
2 apples, peeled and thinly sliced
1/4 cup vegetable broth
2 Tbs honey or agave nectar
1 Tbs cider vinegar
2 Tbs celery leaves, minced
3 large sage leaves, minced
Dash of nutmeg
Salt and pepper to taste
Directions
1. Sauté onion in olive oil until cooked through, about 8 minutes. Add apple slices and sauté for an additional minute. Add vegetable broth, cover and simmer until apples are tender but not mushy, about 7 minutes.
2. Add vinegar and honey. Simmer uncovered for a few more minutes until sauce thickens a bit. Stir in celery leaves, sage, nutmeg, salt and pepper. Serve with meat or greens.
