Fennel, Mango and Pomegranate Salad

FennelMangoSaladThis salad is a colorful, flavorful alternative to the more expected greens-based salads. It has a light, fresh taste and a pleasant crisp texture.

1 fennel bulb
2 stalks celery
1 small mango, peeled and diced
1/4 cup pomegranate seeds
1/4 cup slivered almonds (optional)
3 Tbs olive oil
1 tsp cider vinegar
1 Tbs orange juice
1/2 tsp orange zest
1 Tbs honey or agave nectar
salt and pepper to taste

1. Shave fennel bulb and celery with a mandoline and put in a salad bowl. Toss together with mango, pomegranate and almonds.

2. Thoroughly blend olive oil, vinegar, orange juice, zest, honey/agave, salt and pepper. Pour over salad and serve.
